French fries are thinly sliced, deep-fried potatoes that are crispy on the outside and soft on the inside. Often served hot and salted, they’re a popular side dish or snack enjoyed worldwide.

  1. Peel and cut potatoes into 1/4-inch thick sticks.
  2. In a large bowl, mix hot water, white vinegar, and 1 tablespoon salt until salt dissolves.
  3. Add potato sticks to the vinegar-water solution and soak for 20 minutes.
  4. Drain potatoes and pat dry thoroughly with paper towels.
  5. Heat vegetable oil in a deep fryer or pot to 325°F.
  6. Fry potatoes in batches for 4–5 minutes until tender but not browned; remove and drain.
  7. Increase oil temperature to 375°F.
  8. Fry potatoes again in batches until golden and crispy, about 2–3 minutes.
  9. Drain fries on paper towels and immediately season with the remaining 1 tablespoon salt.
  10. Serve hot and enjoy the extra-crispy texture.
